Ingredients:

Directions:

  1. Grate the cheese. You should have 0.5 to 1 cup
  2. In a bowl, mix the cornmeal, cheese, and salt.
  3. Stir in water and mix until doughforms.
  4. Let the dough rest for 1 to 2 minutes.
  5. With your hands, scoop up about 3 tablespoons of dough.
  6. Form a ball and flatten it in your palms, about the size of a hamburger bun.
  7. Place the patty on waxed paper.
  8. Form the rest of the dough into patties in the same way.
  9. Pour the oil into your frying pan or skillet.
  10. Heat it over medium heat until the oil shimmers.
  11. Carefully place the dough patties into the pan
  12. Fry about 4 minutes on each side, turning them with a spatula, until the arepas are golden brown. If the oil gets low, add a little more.
  13. Set them on a plate lined with a paper towel.

Makes about 4 arepas.
