Arepas

Ingredients:
- 1 cup arepa flour OR 0.5 cup cornmeal plus 0.5 cup white flour
- 0.25 pound mozzarella or Cheddar cheese
- 0.25-0.5 teaspoon salt
- 1 cup plus 2 tablespoons water
- 3 tablespoons vegetable oil
Directions:
- Grate the cheese. You should have 0.5 to 1 cup
- In a bowl, mix the cornmeal, cheese, and salt.
- Stir in water and mix until doughforms.
- Let the dough rest for 1 to 2 minutes.
- With your hands, scoop up about 3 tablespoons of dough.
- Form a ball and flatten it in your palms, about the size of a hamburger bun.
- Place the patty on waxed paper.
- Form the rest of the dough into patties in the same way.
- Pour the oil into your frying pan or skillet.
- Heat it over medium heat until the oil shimmers.
- Carefully place the dough patties into the pan
- Fry about 4 minutes on each side, turning them with a spatula, until the arepas are golden brown. If the oil gets low, add a little more.
- Set them on a plate lined with a paper towel.
Makes about 4 arepas.
